Product Review: Lundberg Creamy Parmesan Risotto

I had risotto for dinner tonight! I know, this will not excite most of you, but I don’t do risotto often. It usually takes a lot of effort and careful stirring to get good risotto and well... By the time I finish my work for the day I am just too lazy to go to the effort.

I discovered Lundberg Risotto on my most recent gluten free shopping excursion and had to try it for two reasons. First off, it is labeled as gluten free. I like this in any packaged mix or product I buy because it takes the guesswork out of label reading. (Yes, I know the rice itself is gluten free, but sauce packets concern me.)

The other reason I had to grab this stuff was the fact that the directions were EASY. You saute the rice in a bit of olive oil, add water and the seasoning packet and cook. Aside from stirring occasionally, there is very little effort involved. I was able to bread and cook chicken while the risotto made itself- very nice!

The claim on the box of “30 minutes from start to finish” was completely true. And the taste! It was rich and creamy with such an amazing flavor. The texture was also perfect, I would have a hard time finding something to complain about.

Usually this is the point where I tell you that the only down side of the gluten free product is the price. Not so today :) The box only cost me about $3.50 and it made a very satisfying amount.

Lundberg offers five different flavors of risotto (Creamy Parmesan, Garlic Primavera, Cheddar Broccoli, Italian Herb and Butternut Squash). The Creamy Parmesan is the only one I’ve tried so far, but it was so good that I will be looking for the other flavors soon.
