Product Review: Lundberg Florentine Risotto
Back in September I did a review of Lundberg Creamy Parmesan Risotto. At the time I was very impressed by both the flavor and performance of the product. Since that time I have had a chance to try another flavor of Lundberg Risotto - Spinach and Mushroom Florentine. (Apparently my grocery store only knows of the two flavors, I have yet to try any others.)
Lundberg Florentine Risotto has an added benefit over the Creamy Parmesan flavor in that it is not only gluten free (and labeled as such) but also vegan. This makes me happy because it means that it is dairy free as well, making my tummy happy.
The spinach and mushrooms for this dish are dehydrated in a sauce packet. This is not an unexpected thing, but it definitely changes the flavor and texture a bit.
The spinach is in very small flakes, much like parsley. It spreads evenly through the cooked risotto, giving it a pungent, earthy flavor. To be honest, I wouldn’t have guessed that the green flecks were spinach had I not read it on the box.
The mushroom pieces are small and disperse evenly as well. They take on a firm texture when cooked. The bonus is that they are not spongey. The drawback is that they don’t seem to lend much to the overall flavor.
The risotto itself is wonderful. It cooks up with just the right amount of firmness and softness. The sauce is very creamy. The flavors work well with red meat, but can stand alone as a light meal.
I love this for it’s flavor, it’s super easy preparation and it’s price. I recommend it for anyone looking for something a little different - that can be made very fast.
