The Biscuit Journey
I knew when I was asked to cook for Gling that I would focus deeply in baking, specifically. I wanted to try to find bread that tasted just like bread for those who are part of the gluten free world. I tried store-bought gluten free bread and it was not the picture of what I thought gluten free bread should taste like. I started looking at a lot of recipes from different sites to get an idea of the current Gluten-free breads available.
In the process of looking at all the recipes, I decided that I wanted to create my own flour mix that would be on hand and ready. I created a mix that works great with my biscuit recipe. It was important to me to add a flour that had some nutritional value. I use a lot of white rice flour in my cooking. In my biscuit recipe white rice flour works well and not very different than your traditional biscuit.
When I made this biscuit the first time, I made it with green onions. This really made the biscuit moist. It also has great flavor from the green onion. I made the biscuit a third time and this time I made it with dried Thyme. Although they were both good, I find that when adding a wet fresh ingredient it makes the item moist. I think you will be happy with either version of this recipe.
There are really many ways you can make this biscuit. You can add a variety of different cheeses. You could even substitute the milk for buttermilk. The other thing that I found with this recipe is that the biscuits rise well and stay that way after they are cooled.

I've had these biscuits. They are EXCELLENT! My favorite was the thyme version. The green onion, though, had an amazing flavor, too.
Texture was excellent, as well.

I'm a bit of a texture freak...meaning I just don't like many of the GF versions of my favorites. These biscuits taste and feel like biscuits. Tanya spends and incredible amount of time experimenting and throws out a lot of not so good or just okay food in this process. Thanks for your hard work and well done!
