Chicken Again? Yes!
Have you ever heard someone complain about eating chicken again? Perhaps you just cooked too much, or your family just needs something a little more fun.
Sometimes, when I'm not in the mood to cook, I will pick up a rotisserie chicken from Costco (one of the few stores that have gf rotisserie chickens), and we will make salads or something else for dinner.
But the real treat comes the next day, for our favorite use for leftover chicken is pizza!
There are many great ways to use chicken in pizza. Our current favorite is chicken and spinach alfredo. It's super easy.
Prepare your favorite gluten-free pizza crust (we love Chebe!). Pre-bake it according to directions.
Top with:
your favorite gf alfredo sauce (such as Classico - it reads "gluten-free" on the label)
fresh spinach, cut into small pieces
leftover chicken, cut into small pieces
mozzarella cheese shreds, or Italian cheese shreds
Finish baking as directed for your crust.
If you do a little work beforehand, pulling the chicken off the bone and cutting and tearing it into small pieces, then making this pizza is very simple and not very time-consuming.
Bring some life into those leftovers. Make pizza!

Sounds really good! We like the rotisserie chicken at Costco. It's a great starter for most any meal! I will have to try the pizza idea, sounds like something that my family would really enjoy!!! Thanks for the idea!!!
