Good morning! Breakfast is ready...are you hungry?

Don't you just wish someone would greet you every morning with breakfast already made? I don't know how your mornings are, but mine are busy. Get up, help my hard working husband get his breakfast and lunch put together. Sometimes even get to have coffee with him before he leaves for the day. Then it's time to get kids up, ready for school, morning chores done, lunches made, throw a load of laundry in the washer and fix breakfast. Sound familiar? Who has time for a filling breakfast that is not expensive, tastes good and will keep the kids going until lunch time? YOU DO!!

I know, you are thinking I'm totally nuts! Yes, it is easy to throw a bowl of gluten-free cereal at your kids and send them on their way. Think about it though, how much do those boxes of cereal cost? I know the gluten and sugar filled cereal at the grocery store cost a small fortune, gluten-free can often cost twice that. Don't get me wrong, I know that there are days when that is just what needs to be on the menu for one reason or another. I have been there too! Once in a while, we have a cereal morning here too. Those mornings are kept to a minimum though, for budget reasons and for the simple fact that cereal just doesn't fill my kids up . They are starving within an hour.

There are so many healthy, filling, budget friendly options out there. Here in my kitchen, I try to cook a hot breakfast for my kids at least 5 days a week. My kids are also able to help and some mornings even cook for themselves, but I am generally the one to cook the morning meal. As with all of my menu ideas since going gluten-free, I have worked to find breakfast food recipes that don't leave us feeling deprived.

There are so many options for a healthy and filling gluten-free breakfast that don't have to come from a box, I promise! Do you remember pancakes, waffles, German pancakes, crepes? I could go on, but you get the idea. A little planning and you can have these ready to serve in no time. All of these satisfying options can be made with the same all-purpose flour blend. I played with a few different recipes for gluten-free flour blends and came up with one of my own. My recipe has both protein and starch for both texture and nutrition. As with much of my cooking, the ingredients are easy to find in most gluten-free kitchens.

So you have the recipe, you've made the flour blend and want to know what to do with it. Right? That is the beauty of this flour blend, your old favorite breakfast recipes can easily be made with it! Look up your favorite waffle recipe, pancakes, crepes, even German pancakes and make them. One of my favorites for a busy morning is the German pancake. Put the ingredients in the blender, melt the butter in the baking dish, pour the blended ingredients in the baking dish and bake it while you take your shower or dress the kids. In twenty minutes you have breakfast.

What do you put on top of this yummy creation? Here in my house, we serve up a batch of homemade buttermilk syrup. Yes, it sounds different, but it is out of this world. Cook it up the night before and reheat it in the microwave or in a pan on the stove. So easy, so yummy and your kids will go to school with a full stomach. Plus they will not be missing out on their old favorites and won't have the side effects that the old favorites would have caused!
