What is every kids favorite thing in their lunch box? The cookie or treat, of course!

Chocolate chip cookies have been the favorite of our family for years. My gluten version of chocolate chip cookies were a favorite of anyone who tried them. When we changed our lifestyle and cut out gluten, this was something I felt we'd never have "as good" as the original.

Well, much like my search for a good bread, the cookie search was long and frustrating at times. After many failed attempts at making a gluten-free chocolate chip cookie that tasted as good as my gluten recipe did, I have found the perfect cookie!

Like many of my recipes, this one was a combination of many other "close but not quite" recipes. The result is out of this world! Best of all, it is a packable cookie that will stand up to my kids' lunch boxes. They will get to eat their cookie, and not just the crumbs that are left behind after a couple of hours in the harsh world of school lunch boxes and backpacks. As with my bread recipe, these cookies are also made from ingredients that are generally found in most gluten-free kitchens.

Once I realized that I had found a couple of really good lunch box options, I felt like the school year would be a better one for my kids, at least as far as the lunch box situation goes. I will continue to play with different ideas, different recipes, and different options for varieties sake. I am learning that other than gluten, my kids' taste buds, and my grocery budget, the sky is the limit when it comes to lunch box ideas. None of those have ever stopped me from coming up with good options for my family.

It takes a bit more thinking sometimes, but I know that my family will eat well, enjoy their food and not leave the table feeling like they have missed out on anything. The more I learn, the more I am able to make our gluten-free world feel as good, if not better, than our former gluten-laden life was. Plus, we feel better for all of the effort, making it all worth while!
