Craving a fruity dessert?? How about a fruit cobbler!
Some nights you just need a yummy dessert idea. I try to make some kind of dessert about once a week, just because. It's just one of those little things that I can do that puts a smile on the faces of my family, always worth the little bit of effort that it takes. When I was a kid, one of my favorite desserts was my grandmother's peach cobbler. She made the best I have ever tasted.
Not long into my journey in this gluten-free world, I found a recipe that I didn't have to alter at all and it was almost exactly like my grandmother's recipe. It is one of those comfort foods that I knew I needed to find a way to make gluten free, and finding a recipe that was perfect just the way I found it was a huge blessing! I have made this recipe many times, with many different varieties of fruits and berries. They have all been wonderful!
One of the beautiful things about this cobbler is that you can use either fresh, frozen or canned fruit or berries. I have yet to try one that didn't work well. One of our favorite variations of this recipe is peach, but blueberry is also a favorite. Marion berries also work well . If you try something different, you'll have to let me know what it was and what your family thought. I'm always looking for a different variation of our favorites!
There is one change I did make to this recipe, I have found that we prefer it without the nutmeg and cinnamon the recipe calls for. I know that there are some fruit options the spices would work well with, but we all remember grandma's recipe and hers did not have any spices added. Try both and see what you think. Your family may like it better with the added spices. I have wanted to try this cobbler recipe with pears, the spices would led a wonderful flavor to that particular fruit.
As with many of my favorite recipes, the fact that I can use my flour mix is an added bonus. I have also made this with just rice flour and it turned out fine, but it does turn out more like grandmas when I use the flour mix. I think it just needs the guar gum to help the flour and other ingredients hold together better and have a better texture. In a pinch though, you can use just white rice flour and still end up with a good dessert.
The next time you need an easy dessert that is easily made from ingredients you already have on hand, try this. It's wonderful with ice cream on top, or fresh whipped cream. It's even good on it's own. Our favorite way to enjoy this dessert is with homemade vanilla ice cream....but that's another blog entry.
