Quick! I need chocolate...NOW!!

Ever have one of those days? Why we think that chocolate can fix anything, I don't know, but it does! Doesn't it? I have only known a few people in my life that didn't like chocolate. I didn't understand that, but I didn't hold it against them either. That just meant that there was more for the rest of us that do!

Years ago, my mother-in-law shared a very simple cookie recipe with me that has become a family favorite. It's so simple, that my kids can make them with no problem. Best of all, the ingredients are ones that most of us have in our kitchen anyway. Best part about this recipe is that it's quite easily adapted to gluten free without any problem at all!

When my mother-in-law first shared this recipe with me, I thought the name was very odd! Who ever heard of a boiled cookie? After watching how they are made, it made perfect sense. These cookies are not baked, they are cooked on the stove top and then scooped out onto waxed paper on your counter to cool. So simple and so good!

My kids love them in their lunches, or as an afternoon snack. They pack very well and hold up to any lunch box abuse your kids can dish out. The fact that they are so easy to make, is a huge added bonus when we run out. It only takes a few minutes to make another batch. We rarely make just one batch at a time though, this recipe is often doubled.

Storing these cookies until they are all eaten is easy too. Just store them in any air tight container and they keep for up to a week on your counter. Not that they will last that long, but if they needed to, they could. Here at my house, we could easily make a double batch once or twice a week!

This cookie makes a great addition to any holiday cookie platter, potluck meal or just a nice thank you gift. Just make sure that you label these clearly so that everyone knows they do contain peanuts. I haven't tried it, but I'm sure you could replace the peanut butter for any "butter" on the market. So many varieties are available now from sunflower butter to almond butter.

So, the next time that chocolate craving has you on your knees looking for the last chocolate chip in the pantry, stand up and make these delicious treats! It's sure to satisfy any chocolate craving and give your cookie jar a nice change for a while. I'd also love to hear from anyone that tries the different nut butters in this recipe. Variety is always nice to have. Play with it and see what you think!

    Valerie - Sounds weird ... but yummy. :) We'll give it a try. Also, I'll try to remind Tanya to post her Chocolate Candy Bon-Bons recipe ... an old family holiday favorite that was already gluten-free so we didn't have to drop it from the list. You will love it!

    Yes, it does sound a bit weird, but trust me...if you like chocolate, you'll love these. Everyone in my house does anyway! :-) I'd LOVE to try your Bon-Bons recipe, sounds wonderful!
