Pumpkin....the flavor of fall!

This time of year is so much fun for the kids. The schools start thinking about pumpkin patch field trips, harvest carnivals and all that fall has to offer. When I think of fall baking, I always think pumpkin! Here in my house, we love pumpkin anything.

Often, I will add a cup or so of canned pumpkin to my pancake or waffle batter. Add a bit of cinnamon or pumpkin pie spice and we have the perfect fall breakfast! Serve this with a bit of spiced apple syrup and you have a wonderful pairing fitting of the season. Even warmed maple syrup is a wonderful topping!

Pumpkin breads, cakes, pies, cookies and even cobbler will bring a taste of fall to your home.

Last night, as a treat for my family, I made a gluten-free pumpkin cobbler. Talk about a hit! Tasted a lot like pumpkin pie without the work of making a crust. All we were missing was the fresh whipped cream on top.

The recipe as it is listed here on Gling is good, but I played with it a bit last night. Seems to be what I do with most recipes, I know. This time, I decided the pumpkin part of the cobbler could use some "help" so to speak. So, I added a cup of sugar, a teaspoon of cinnamon and a bit of ground cloves.

After my tweaking the recipe, it really tasted like pumpkin pie. If I'd had pumpkin pie spice on hand, I would have added that instead of the cinnamon and cloves. What I did worked though. I think any spices you normally enjoy in your pumpkin pie would work wonderfully here.

As I said before, something was missing though. We could have used some fresh whipped whipping cream on top. Sweetened with a bit of powdered sugar, a touch of vanilla and even a dash of pumpkin pie spice to liven it up a bit! OK, is your mouth watering? Yummy!

Not long ago, a friend of mine shared a recipe for pumpkin coffee creamer. YUM! I haven't made it yet, but I'll share it here, it looks really good. It has all the flavors of fall in your coffee cup. What could be better? Sounds like a wonderful way to start your morning. Add some fresh whipped cream and you'd have a coffee house favorite for sure!

The sky is the limit when it comes to pumpkin and what you can do with it. Try some cookies, try a bread or cake. Like I often say, "Play with your food" and find creations of your own. What do you have to loose? A few ingredients? What do you have to gain? A wonderful yummy dessert or dish that your family will rave about! Best of all, you can do it all gluten-free and no one will be the wiser!
