Easy Thanksgiving Leftovers
The Thanksgiving dinner is over, the food was wonderful and now you have a bunch of leftovers to enjoy for the next several days. For someone who loves to cook and loves to serve wonderful foods to my family, this is always a fun time, especially if I have a lot of extra food to work with. The traditional turkey sandwich is a wonderful treat, but let's face it, it does get old.
This year, try some new dishes and find some new favorites. Maybe there are a few you remember from days gone by that you thought were destined to remain a memory? The possibilities are endless. So many options and only so many leftovers. You may want to cook another turkey just to try some of the ideas we have here.
First, let's see what you have leftover from the big dinner. Do you have stuffing, mashed potatoes and some gravy? Oh my, there is a wonderful dish you can make with just a bit of these. Cut up some turkey and heat up some mashed potatoes and you could have an amazing Turkey Shepherds Pie.
Maybe you are looking for a flavor combination that is not a traditional Thanksgiving flavor? How about Turkey Enchiladas? At first glance, I was not sure about this idea, but let me assure you it is a good one! Totally not "Thanksgiving" in flavor or presentation, maybe that is just what you need after a few days of turkey day. Serve this with some refried beans, chips and a salad and you have a wonderful meal.
Let us not forget the lunch box in our leftover discussion. Who doesn't look forward to a good turkey sandwich after a successful Thanksgiving dinner! How about a salad? Fruited Turkey Salad would be the best of both of those options. The fruit and the turkey just seem to go together.
Perhaps you are a true traditionalist and think there is nothing better than a good old fashioned turkey sandwich. No problem, take out a couple slices of flat bread, mix together a bit of mayo and leftover cranberry sauce, some lettuce leaves and slice some turkey. You have the makings of a winning sandwich, for sure!
