You have a rotisserie chicken....What to do with it?
So many grocery stores carry gluten-free rotisserie chickens in their deli section now, and they are often very affordable. Such a wonderful way to have a quick meal for your family and so many options to choose from. It just takes a few ingredients to have a complete meal in minutes.
When you get home with your ready to eat chicken, the question then is what to do with it. Yes, you could serve it as is, but having a variety of options is so much more fun! You could almost serve chicken every night of the week and still have options leftover.
Here are a few ideas for you:
- Chicken enchiladas
- Chicken Pot Pie
- Chicken Salad
- Chicken Soup
- Chicken Tetrazzini
- Healthy and Easy Stir Fry
- Lime Chicken Tostadas
- Chicken Chili
- Chicken Fried Rice
- Chicken Pasta salad
- Pizza
- BBQ Shredded Chicken Sandwich
- Shredded Chicken Soft Taco with Gluten-Free Flour Tortillas
- Taco Salad with Shredded Chicken
As you can see, there are many ideas that you can run with once you get your rotisserie chicken home from the store. Any recipe that has already cooked chicken in it will work nicely. All you have to do is take the meat off the bone for most recipes, then dice or shred it depending on the use.
When you have made your meal with the meat from the rotisserie chicken, don't throw that carcass away. You can easily make rotisserie chicken stock. Trust me, it's not hard and you can start it in a matter of minutes and walk away from it for a few hours. I have made chicken stock many times in my crock pot.
Such a wonderful way to get every last bit of usability out of that deli cooked rotisserie chicken! Really get your money's worth. Save the stock for future meals, sauces and gravies. It freezes well if you aren't going to use it in a few days. It's so good you may never want to go back to store bought stock again.

Valerie, thanks for the tips. I do pick up chicken a few times a month. This is a great way to change up the menu without having to cook very much. Now, how do I find this again when I need it?

If you want to find this blog again, do a search for "chicken" in the search area at the top of the page and specify "blogs".
