Valentine’s Day is just around the corner. It really snuck up on me this year for some reason. How about you? Does life seem to be one nonstop race sometimes?

When was the last time you made a special dinner for your whole family? A dinner with a “theme” perhaps? Why not take this Valentine’s Day and make a special dinner for the whole family?

Start the meal out with a fun appetizer like bacon wrapped smokies or cranberry glazed meatballs. Maybe just something like chip and salsa would work well too. My kids love it when we have appetizers before a meal...after all, that’s something that grown ups enjoy before a meal, right?

Once the appetizers are finished, you could move on to a salad course. A simple green salad is always a nice way to start a meal. Have a favorite salad dressing or two on the table and let them choose their favorite.

The main course can be all out fancy or simple and kid friendly. Have fun with it. For a choice on the fancy side of things, try stuffed chicken breasts. For a side dish you could have risotto and some steamed vegetables.

Want to go simpler or more “kid friendly”? Why not just make every kids favorite, macaroni and cheese or how about pizza? Make it fun and as easy as it needs to be.

Now, we can’t forget dessert! Super simple, would be ice cream sundaes or banana splits. Want a bit more on the fancy side? Cheesecake is always a winner in my house. For an easier dessert, why not make a cobbler or crisp? Always sure to please. If you have cake lovers in your house, Gling has many cake recipes to choose from as well.

Most importantly, make it fun. Even if you go out and buy a mix or a pre-made item, the memories your kids will have of this special dinner with mom and dad will last a lifetime. Get them involved in the planning, cooking or even decorating. Let them make a center piece for your table, or eat your dinner on a blanket on the living room floor.

Have fun, get the kids in on the act and make some memories...along with some tasty food!
