About: I was diagnosed with Celiac last April after my father was diagnosed. I've been basically gluten=free since then. I'm a picky eater and a "super taster" (check out the They Might Be Giants song - John Lee Supertaster for more on that :) ) and practically lived on baguette and spaghetti before the diagnosis. I love baked goods and pastry and cookies. It's been a hard transition, not the least of which because I'm one of those pre-symptomatic celiacs - I'm chronically iron deficient, but not anemic and I have no overt symptoms when I eat wheat. It's through sheer force of will and intellect that I keep GF... That all said, I'm also a giant nerd and handle stress and transition by studying my adversary to death. I've been reading texts on food science, doing experimentation, researching online, and I've begun to collect the products and recipes necessary for me to keep myself from starving. Ask me about crumb and mouthfeel for a sampling of my nerdy power.
