Apple Cinnamon Muffins safe

These taste rather good.

These muffins are easy to make. When you are mixing them up, before you add the grated apple to the batter it will look way too dry. It will loosen up and be a moist batter when you are finished adding ingredients. These were wonderful made into mini muffins as pictured, bite sized. Not too sweet, but full of apple flavor. So tasty!

Prep time 10 minutes
Cooking time 30 minutes
Servings 12

Ingredients

Dry Ingredients:
1/3 cup sugar
1 cup rice flour
1 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda

Wet Ingredients:
2 eggs
3 tbsp canola oil

Flavorings:
1 apple, grated
1 tsp cinnamon

Instructions

1 – Combine the dry ingredients in a bowl.

2 – Mix the wet ingredients in another bowl and quickly add to the dry ingredients.

3 – Add any additional flavorings and stir very briefly.

4 – Put into greased or paper lined muffin cups and bake in a moderate oven (350 degrees) until golden and firm to the touch.

5 – Makes about 12 medium sized muffins.
