All the flavor of an apple pie in a tasty scone.
Completely tasty, loaded with apples and spices. A perfect way to start your day. Totally portable for those mornings where you need to grab something and go.

2 cups gluten free flour blend
2 teaspoons baking powder
1 teaspoon xanthan gum
1 teaspoon salt
4 Tablespoons brown sugar
1 teaspoon apple pie spice
1/2 cup butter
1/2 cup half and half
1 Large peeled and chopped apple
1/2 teaspoon apple pie spice
1 teaspoon granulated sugar
1 egg white, lightly beaten (for egg wash)
cinnamon and sugar mixture for sprinkling
Preheat oven to 425 degrees. Measure out first 6 ingredients into your food processor. Cut cold butter into chunks and place in food processor with dry ingredients. Pulse food processor until the mixture is combined and looking like coarse crumbs. Add whole eggs and half and half to dry ingredients and pulse just until the dough comes together. Do not over mix.
In a small bowl, combine the chopped apple with the 1/2 teaspoon of apple pie spice and the 1 teaspoon of granulated sugar.
Dump dough out on to a lightly floured board. Gently knead in the apple mixture. Be careful not to overwork the dough. Shape into a 1 to 1 1/2 inch thick round disk. Cut as you would a pie, into 8 wedges. Place wedges onto a lightly greased baking sheet, leaving about an inch between each scone. Brush each scone with the egg wash and sprinkle with a mixture of cinnamon and sugar. Bake for 15 minutes, or until golden brown. Transfer to a cooling rack to cool completely, or serve slightly warm.
For smaller scones, divide dough in half after adding the apple mixture. Follow the same directions for shaping and cutting the scones. You will end up with 16 smaller scones, perfect for kids, parties or snacking on. Adjust baking time as the smaller scones will bake faster.
