Such a tasty combo!
These are SUPER easy to whip up and the flavor combination is amazing! Moist and keep well for several days.

1 cup gluten free flour blend
1/2 teaspoon xanthan gum
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 medium sized apple, peeled, cored and chopped
1/4 cup honey
1/4 cup crunchy natural peanut butter
2 eggs (equivalent of liquid egg substitute)
3 Tablespoons vegetable oil
2 Tablespoons brown sugar
Orange juice, juice from half an orange
1/2 teaspoon vanilla
Preheat oven to 400 degrees. Line muffin tin with paper liners or spray with non stick spray.
In a medium bowl, whisk together first five ingredients. Set aside.
In a mixing bowl, beat the apple, honey, peanut butter, eggs, oil, sugar, orange juice, and vanilla until fairly smooth. Some chunks will remain because of the apples and chunky peanut butter. Beat in the flour mixture. Spoon into prepared muffin tin. Bake for 20 minutes or until a tooth pick inserted near the center comes out clean.
Amazingly tasty warm.
