Avalanche Bark
Totally addicting...totally good!

This was given to me years ago as a "thank you" gift from a friend at church. It soon became a favorite! Thankfully, the recipe was included with the bark so I could make it again, and share it with others.

Ingredients
1/4 cup creamy peanut butter
1 3/4 cups white chocolate chips
1 cup gluten free crispy rice cereal
1/2 cup mini marshmallows
1/4 cup frozen semi-sweet chocolate chips
Instructions
In a double boiler (or a heat safe bowl over a sauce pan), over medium-high heat, add white chocolate chips and peanut butter. Constantly stir with wire whisk until completely melted. Remove from heat. Set aside to cool for about 5 minutes. Do not refrigerate. Just cool enough so the chocolate chips and marshmallows don’t melt when added. While you wait, line a 4“x8.5” loaf pan with plastic wrap. Spray lightly with cooking spray for easier removal of your bark when done. When the white chocolate mixture is cooled, fold in marshmallows first then semi-sweet chocolate chips and cereal. Do not overwork the mixture, just fold to combine. Pour into the prepared pan. Fold the excess plastic wrap over the top and press the mixture so it’s even in the pan. The harder you press, the denser the bark will be. Once pressed, place in refrigerator to set up. It will take 20-30 minutes to completely set up. When set, remove from the pan and cut into desired size pieces.
