Awesome Chocolate Chip Cookies
You won't think these cookies are gluten-free.

Chewy, crunchy, or however you like them - these are a real treat.

Ingredients
1/2 cup softened margarine
1/2 cup brown sugar
1/2 cup sugar
1 large egg
1/2 tsp vanilla
3/4 cup rice flour
3/4 cup soy flour
1 tsp xanthan gum
1/2 tsp baking soda
1/2 tsp salt
1 cup chocolate chips
Instructions
1 – By hand blend margarine, sugars, egg, and vanilla until creamy.
2 – In a separate bowl blend flours, baking soda, and salt. Combine both bowls and mix well. Add chocolate chips and mix. Roll into balls.
3 – Bake at 375 degrees for 12-15 minutes on a lightly greased preheated cookie sheet. (Stoneware works best.)

I made these and replaced the soy flour with almond flour only because I didn't have soy flour. They turned out great!

I think I used Gar-Fava flour when I made them, I don't use soy flour. Glad you liked them!

You didn't make this recipe ever with the soy? I will need to try it with Gar-Fava too.
