Baked Apple-Cranberry French Toast safe

The perfect dish to make ahead when you know you'll have a busy morning! SO tasty!

My family didn't leave any leftovers of this dish. It was so easy to pull out of the refrigerator and pop in the oven while we got ready for our day.

Prep time 20 minutes
Cooking time 55 minutes
Servings 4-6

Ingredients

4 Tablespoons butter
3 large apples, peeled and sliced thinly
3/4 cup brown sugar
2 Tablespoons water
1/2 cup dried cranberries
1 teaspoon cinnamon
8 slices gluten free bread, sliced about an inch thick (I used Orange Bread for the Bread Machine)
4 large eggs
1 1/4 cups milk
2 teaspoons vanilla

Instructions

Melt the butter in a large skillet and add the apples. Cook and stir for 5 minutes. Add the brown sugar, water, dried cranberries and cinnamon and continue to cook and stir for 10 minutes or until apples are tender. Spoon mixture into a 13×9” baking dish that has been lightly greased. Cover apples with bread slices, making sure to cover the entire surface, trim the bread to fit if needed. Beat eggs until foamy, then beat in milk and vanilla. Pour egg mixture over the bread slices. Cover with plastic wrap and refrigerate overnight. In the morning, remove the dish from the refrigerator and let it stand while oven is preheating to 375 degrees. Bake uncovered for 35 minutes or until bread is golden brown and firm. Let sit 10 minutes before serving.

If you have a platter big enough, you can gently flip the whole thing out onto it. If not, just cut into serving pieces and flip them onto a each plate.

*This would also be really good with a bit of orange zest in with the apples in the beginning.
