Baked Apple Tapioca safe

Even if you don't like tapioca, you will love this dessert!

My kids said they this tasted like a baked apple pie from a well known fast food restaurant. I have to say that I agree, quite tasty! Best part, it's very low fat, if not fat free and you won't even miss the "crust" part. Serve with whipped cream, ice cream or over biscuits or waffles.

Prep time 10 minutes
Cooking time 50 minutes
Servings 8 servings

Ingredients

3 to 4 medium tart apples, peeled and sliced
2 cups water
1 cup packed brown sugar
1/2 cup quick cooking tapioca
2 Tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon apple pie spice

Instructions

Arrange apple slices in a 9×13 baking dish that has been sprayed with non stick spray. In a sauce pan, combine the remaining ingredients. Let stand for 5 minutes. Bring to a boil over medium heat, stirring constantly. Pour over the apples. Cover and bake 350 degree oven for 30-35 minutes or until the apples are tender. Serve warm.
