So easy to make to go along with your meal, a perfect side dish. This was adapted from a gluten-filled recipe I found in one of my cookbooks (Taste of Home). So tasty!

Prep time 5 minutes
Cooking time 15 minutes
Servings 2

Ingredients

1 tablespoon olive oil
1 1/2 teaspoon cider vinegar
1 tablespoon minced onion
1 garlic clove, minced
1/4 teaspoon salt, or to taste
Dash of pepper
1 1/2 cups frozen cut green beans, thawed (fresh could be used as well)
1 tablespoon crushed gluten free crackers or gluten free bread crumbs
1 tablespoon grated Parmesan cheese
1 teaspoon butter, melted

Instructions

In a small bowl, combine the oil, vinegar, onion, garlic, salt and pepper. Add the beans and toss to coat. Transfer to a greased 3-cup baking dish. Combine the bread or cracker crumbs, Parmesan cheese and butter. Sprinkle over the beans. Bake uncovered at 350 degrees for 10-15 minutes or until heated through.
