Best Ever Gluten-Free Cranberry Orange Bread safe

So simple and so yummy! Perfect for Christmas!

My family loves cranberry orange bread. This is the easiest and most tasty version of our favorite yet.

Prep time
Cooking time 60-70 minutes
Servings 4 small loaves

Ingredients

1/2 cup butter or margarine, softened
1 1/4 cups orange marmalade jam
1/2 to 1 cup sugar (depending on how sweet your jam is and how sweet you want your bread to be)
2 eggs
1 teaspoon vanilla
2 cups white rice flour
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon xanthan gum
2 cups whole cranberries

Instructions

Cream butter and sugar. Beat in jam, eggs and vanilla. In another bowl, mix together the dry ingredients. Once combined, add the flour to the butter mixture. Once combined, stir in cranberries.

Grease either 2 loaf pans or 4 mini loaf pans. Heat oven to 350 degrees. Bake for 60-70 minutes or until a toothpick inserted near center comes out clean and the bread has begun to pull away from the sides of the pan. Allow to cool in the pan, then remove to a wire rack until fully cooled.

***Use dairy-free, soy-free substitute for this recipe to be dairy or soy-free.

    It IS good with coffee...I'm enjoying some right now! Oh, and THANK YOU for the inspiration for this bread....I took your banana bread recipe and played with it to come up with this. Even our gluten-eating family couldn't tell it was gluten-free!

    Thank you Tanya! I love the fact that you don't have to zest an orange or juice one to get awesome flavor in this bread. The marmalade gives it such a wonderful flavor and it is so moist. YUMMY! I am making more today. LOL

    I must have done something wrong. My batter was so stiff, I had to add soy milk???

    Really? Hmm...maybe your orange marmalade is a lot thicker than mine? Mine is homemade, I'll have to try it with store bought. Perhaps you'd have to add some orange juice. I'll play with it and see how it comes out.

    I am baking all day today. I am so excited to do it. I love it. I am thinking this may be one recipe I will make. I think that I have all the ingredients. I will let you know how it goes.
