Bette Hagman's Mock Graham Bread safe

A rice free bread that comes out wonderfully moist and delicious from your bread machine.

A wonderful bread from Bette Hagman! Found in her "Fast and Healthy" cookbook is a wonderful bread. Great for those who have to avoid rice or don't care for rice flour breads. Super moist and very flavorful!

Ingredients

3 cups Light Bean Flour Mix (Bette Hagman’s recipe)
1/2 cup popcorn flour (I used corn flour)
2 1/2 teaspoons xanthan gum
1 teaspoon salt
3 tablespoons maple or brown sugar
1 teaspoon Egg Replacer
1 teaspoon unflavored gelatin
1 egg plus 2 egg whites, or 2/3 cup liquid egg substitute (I used two whole eggs)
1 teaspoon vinegar or 2 teaspoons dough enhancer
3 tablespoons vegetable oil
2 tablespoons maple syrup (or honey)
1 3/4 cups plus 1 tablespoon water
2 1/4 teaspoons dry yeast

Instructions

In a bowl, combine dry ingredients. In another bowl, whisk the eggs slightly and add the rest of the wet ingredients. Place in the machine in the order suggested by your manufacturer. Add yeast to dry ingredients for round-pan models; put it in a well on top for square upright or rectangular ones. Bake on Light or cut the baking time by 5 minutes from regular loaf.
