Better Than Mom's Chocolate Chip Cookies

After much searching, testing, changing and trying recipe after recipe this cookie recipe was born! Makes a wonderful cookie, good for packing in a lunch box or just snacking on with a glass of milk after school! SO GOOD! By far, the best cookie, gluten free or otherwise that I have made. A must have in any recipe file. Best of all, besides the taste, is that the ingredients are readily on hand in most gluten free kitchens. Winner all around!

Ingredients
1 cup white rice flour
1/2 cup corn starch
1/2 cup plus 4 tablespoons sorghum flour
2 teaspoons xanthan gum
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups semi sweet chocolate chips
Instructions
Preheat your oven to 375 degrees F. In the work bowl of your mixer combine butter, sugars and vanilla. Mix on low until combined. Add eggs and combine. In another bowl, measure out your dry ingredients. With your mixer on low, slowly integrate the dry ingredients into the butter and sugar mixture. When they are well combined, stir in the chocolate chips. Spoon out by tablespoon onto a baking sheet and bake for 12-13 minutes. Let rest on the sheet for a few minutes to allow the middles to set, then remove to a cooling rack to cool completely.

Oh my, I could just kiss you for this recipe. They are so wonderful! I had been searching for months for a good GF chocolate chip cookie.
