Black Bean and Corn Salsa
A zippy change from the ordinary salsa. Yum!

Amazingly fresh flavor from this summer salsa. Could even be eaten like a salad or a topping for grilled fish or chicken.

Ingredients
Salsa/Salad:
1 (15 ounce) can black beans, drained and rinsed
1 cup fresh sweet corn, grilled if from a whole ear
1/2 red onion, chopped
1 medium tomato, diced
1/2 red bell pepper, chopped
2 jalapenos, seeded and finally chopped
1/4 cup chopped fresh cilantro
Dressing:
1/3 cup olive oil
2 Tbsp fresh lime juice
1 Tbsp red wine vinegar
1 tsp minced garlic
1 1/2 tsp ground cumin
1 1/2 tsp dried oregano
1 1/2 tsp salt
1/4 tsp sugar
fresh ground pepper to taste
Instructions
In a large bowl, combine ingredients for the salad and toss to combine.
In a small bowl, whisk together the dressing ingredients.
Pour dressing over the salad/salsa and toss to thoroughly coat.
Serve as a salad, topping for grilled meat or as a salsa with chips and fresh veggies.
