Black Bean Quinoa Summer Salad safe

The perfect side dish for any picnic.

So easy, so fresh tasting and a great dish to bring to your next picnic or family reunion! You won't bring home any leftovers, that's for sure.

Ingredients

1/3 cup quinoa
1 cup water
1 teaspoon olive oil
4 teaspoons fresh lime juice
1/4 teaspoon cumin
1 Tablespoon fresh minced cilantro
2 green onions, chopped
1 (15 ounce) can black beans, drained and rinsed
3 small tomatoes, chopped
1 green bell pepper, chopped
1 2 jalapeno, seeded, and chopped
Kosher salt, to taste
Fresh ground black pepper, to taste

Instructions

In a small sauce pan on the stove, cook quinoa in water. I found it best to bring the water to a boil, add the quinoa and stir for a minute. Then reduce the heat to a simmer, cover and simmer until light and fluffy.

In a large bowl, combine all the remaining ingredients. Once the quinoa is finished cooking, allow it to cool before adding it to the rest of the salad. Once cooled, stir into the salad and chill before serving. Serve cold.
