Makes some yummy toast and French toast!
Quickly goes together in your bread machine for a tasty breakfast or mid day snack. Wonderful toasted and makes great French toast. My kids love it! This is a recipe that I adapted from a recipe by Bette Hagman
3 cups gluten free flour blend
2 1/2 teaspoons xanthan gum
1 teaspoon salt
2 teaspoons egg replacer
1/4 cup dry milk powder
1 teaspoon unflavored gelatin
2 teaspoons cinnamon
1 cup raisins (any dried fruit would work)
1/4 cup sugar
3 tablespoons margarine or butter, melted
1 teaspoon vinegar
1 2/3 cup water
2 1/2 teaspoons dry yeast
In a medium sized mixing bowl, combine the dry ingredients. In another bowl, beat eggs and stir in the remaining wet ingredients. Pour egg mixture into your bread machine. Pour dry ingredients in on top and make a well in the top to put the yeast into. Add the yeast. Put bread pan into the bread machine. Select the setting for white bread with a medium crust.
*For dairy-free, substitute a non dairy alternative for the milk powder and a non dairy margarine for the butter.
*For egg-free use your favorite egg substitute in place of the eggs.
*Chopped dried apples and apple pie spice could be used in place of the raisins and cinnamon for a different variation. Dried cranberries would also be wonderful.
