Bread Machine Potato Bread
By far, the best bread that has come out of my bread machine...even gluten lovers love it!

Such a wonderful bread, and so easy to make in your bread machine! My husband, who doesn't have to eat gluten-free loves it. It's the perfect bread to have with any meal, makes beautiful sandwiches and stores well for several days. it is adapted from a recipe by Bette Hagman.

Ingredients
3 cups gluten free flour blend of your choice
2 1/2 teaspoons xanthan gum
1/4 cup dry milk powder
1 1/2 teaspoons salt
1 1/2 teaspoons egg replacer
3 tablespoons sugar
1 teaspoon unflavored gelatin
3/4 cup peeled and grated raw potato (approximately a fist sized potato)
2 eggs
3 tablespoons margarine or butter, melted
1 teaspoons vinegar
1 1/4 cups water
1 1/2 teaspoons dry yeast
Instructions
Combine dry ingredients in a bowl. Stir in potato. Beat the eggs and add the remaining liquid ingredients. Place ingredients into your bread maker in the order suggested by your machines manual. Use the white bread with medium crust setting.
