Caramel Apple Upside Down Cake

A new twist on an old favorite. The pineapple upside down cake, fall style! Sure to please and would make a great addition to any fall dessert table. Perfect flavors of the fall season.

Ingredients
Caramel apple layer:
1/2 cup butter
1/4 cup whipping cream
1 cup packed brown sugar
1/2 cup chopped pecans (or choice of nuts)
2 large cooking apples, peeled, cored and thinly sliced (about 2 1/3) cup
Cake layer:
1 1/2 cups rice flour
2/3 cup tapioca flour
1 tsp salt
1 tsp baking soda
3 tsp baking powder
1 tsp xanthan gum
4 eggs
1 1/4 cups white sugar
2/3 cup mayonnaise
1 cup milk
2 tsp vanilla extract
1 tsp apple pie spice
Instructions
Preheat oven to 350 degrees. In a 1-quart heavy saucepan, cook butter, whipping cream and brown sugar over low heat until the butter is melted. Make sure you stir it from time to time. Pour into a 13×9-inch baking pan. Sprinkle with nuts and top with sliced apples.
In a small bowl, combine the dry ingredients of the cake layer.
In a mixer bowl, beat the eggs, sugar and mayonnaise until fluffy. Add the flour mixture, milk, vanilla, and apple pie spice and mix well. Spread cake batter carefully over the caramel apple layer.
Bake 40-45 minutes or until toothpick inserted near center comes out clean. Cool in the pan for 10 minutes. Loosen sides of cake from pan. Place heatproof platter upside down on the pan and turn out the cake very carefully. Let the pan sit over the cake for a minute or so to allow the caramel to drizzle over the cake.
