An amazing combonation of apple and cheese in a tasty dip.
One of my favorite fondue recipes. What could be better than the flavor of a good gluten-free hard cider and sharp cheddar cheese?

4 cups sharp cheddar cheese, shredded
1 Tablespoon Rice flour
1 cup gluten free hard cider (gf beer could also be used)
1 1/2 teaspoon granulated garlic
1 1/2 teaspoon ground mustard
1/4 teaspoon fresh ground pepper
In a large bowl, combine the cheese and flour. In a small sauce pan, heat the cider, garlic, mustard and pepper over medium heat until bubbles begin to form around the edge of the pan.
Reduce heat to medium-low, add a handful of cheese mixture. Stir constantly in a figure-eight motion until cheese is almost completely melted. Continue to add cheese in this manner until all of the cheese is combined in the pot and melted. Keep warm, serve with slices of apple, gluten-free bread or pretzels.
