Cheese Cracker Bites
Very cheesy and super easy to make!

If your family has been missing those tasty cheese crackers at snack time, these will satisfy your craving! Easy to make and very tasty.

Ingredients
2 cups cheddar (sharp cheddar gives the best flavor, but medium cheddar works fine too)
1/4 cup butter, softened
1/2 cup garbanzo or gar fava flour
1/4 cup rice flour
1/2 teaspoon sea salt
1/2 teaspoon xanthan gum
1 Tablespoon milk
Instructions
Put all ingredients except for the milk into a food processor. Pulse the processor for about 5 seconds at a time, 5 or 6 times or until the dough resembles course crumbs. Add the milk and process until the dough begins to form a ball. Dump dough out onto a lightly floured board and pat together much like you would biscuit dough. Roll out to about 1/8th inch thickness. Cut with a pizza cutter or knife into 1 inch cubes or desired shape. Place crackers on a baking sheet lined with parchment paper. They should be about 1/4” apart on the baking sheet for even cooking. Poke a hole into the center of each cracker with a wooden skewer or tooth pick. This will prevent your crackers from puffing up in the oven. Bake in a 350 degree oven for 12-15 minutes, or until the edges of your crackers are beginning to brown. Cool completely on a wire rack and store in an airtight container. Will keep nicely for a couple of days, if they last that long. :)
