Cherry Walnut Cheesecake safe

Simple no-bake cheesecake

Rich, easy cheesecake with cherries and a fresh walnut crust

Prep time 15 minutes
Cooking time 10 minutes
Servings 8-12

Ingredients

Crust:
3/4 c ground walnuts
1/2 c butter, melted
1/4 c sugar

Filling:
8 oz cream cheese, softened
14 oz can sweetened condensed milk
4 oz (1/2 c) fresh lemon juice
6 oz cherry pie filling

Instructions

Crust:
Preheat oven to 350*F for conventional or 300 for convection.
Line pie pan or 10 inch springform pan with parchment paper.
Combine walnuts with melted butter and sugar until moistened. Press into pan.
Bake 8 – 10 minutes in preheated oven. Remove from oven, let cool.

Filling:
Combine cream cheese with condensed milk a little at a time, beating until smooth. Coarsely chop cherry pie filling or pulse in food processor, add to filling. Beat in lemon juice until smooth.
Immediately pour filling over crust. Cover and chill completely until set.
Top with additional cherries and/or fresh whipped cream, if desired.
