Chicken Sausage Stir-Fry

A spicy gluten-free chicken sausage makes this dish so tasty. Quick and easy for those busy evenings. Perfect for a mid week dinner. Serve over rice and you have a complete meal.

Ingredients
1 pound package Gluten Free Sausage By Amylu Tequila and Lime Chicken Sausage (any chicken sausage will do, I just prefer this brand)
1 medium yellow or sweet onion
2 sweet bell peppers
6 medium to large white mushrooms
olive oil
minced garlic to taste
salt and pepper to taste
Instructions
Cut the vegetables and slice the sausage into similar sized pieces. Drizzle a bit of olive oil into the bottom of a good sized frying pan and heat the pan over medium heat. Once the pan is hot, add the onions and let them soften a bit, then add the meat and the rest of the vegetables. Cook until crisp tender (the sausages are fully cooked). Add garlic and allow it to cook a bit making sure it’s incorporated thoroughly. Salt and pepper to taste. Serve over rice.
