Chocolate Brownie Muffins safe

A bit like a muffin and a bit like a brownie...the best of both worlds.

Chocolate in the best form! Who doesn't love a brownie? Who doesn't love a muffin? Put them together and you have this tasty treat!

3/4 cup butter or margarine
4 ounces semi sweet chocolate
1 ounce bittersweet chocolate
1 cup sugar
1/4 cup brown sugar
4 eggs
1 teaspoon vanilla
1/2 teaspoon xanthan gum
1 teaspoon baking powder
1/2 teaspoon salt
1/4 cup tapioca flour
1/2 cup rice flour


Preheat your oven to 350 degrees. Grease or line a 12-cup muffin pan.

Melt the butter and chocolate over a double boiler. Transfer to a large mixing bowl.

Stir both the sugars into the chocolate mixture. Mix in the eggs, 1 at a time, then add the vanilla. Add dry ingredients and fold in.

Fill prepared muffin tin almost to the top and bake until a cake tester inserted in the center barely comes out clean, 30-35 minutes. Let stand 5 minutes before transferring to a rack to cool completely.
