Coconut Curry Chicken Skewers

Ingredients
1 Tbs brown sugar
1 1/2 tsp curry paste
1 tsp fresh ginger root grated
1 tsp lime zest
2 Tbs chopped cilantro
3/4 tsp salt
1 pound boneless chicken breast pounded thin and cut to about 6 to 8 inches in length
Wooden skewers soaked in water for about 30 minutes
Instructions
Combine all ingredients in a medium bowl. Set aside 1 cup for dipping.
Add the chicken and the coconut mixture to a ziplock bag. Marinade for at least an hour.
Thread the chicken on skewers and place on a broiler pan. Discard the marinade that the chicken soaked in.
Broil about 6 minutes turning halfway through the 6 minutes.
When the chicken is done place on a platter with the dipping sauce. I like to brush a little sauce over the chicken before serving.
