Coffee Cake
Great with your morning cup of coffee

This is a cake that is not to moist and not to heavy. I find that this cake is not heavy and great when your running out the door for work.

Ingredients
4 Tbs butter
1/2 cup sugar
2 eggs
1 egg white
3/4 cup plain yogurt
3/4 cup rice flour
1/4 cup sweet rice flour
1 Tbs baking powder
1 tsp baking soda
1 tsp coffee grounds
1/2 tsp salt
1 tsp vanilla extract
3/4 tsp xanthan gum
2 tsp apple cider vinegar
Topping Ingredients:
1/2 tsp ground cinnamon
1/4 cup brown sugar
3 Tbl butter
Instructions
Preheat oven to 350 degrees
Spray your pan with oil
Combine the butter with the sugar on a medium bowl. Add the eggs and egg white. Beat with an electric mixer until light yellow a bit thicker. Add the rest of the ingredients and mix well. Spread into prepared pan.
Mix all the topping ingredients together, until they crumble, Sprinkle evenly on top of the dough.
Bake for 20 to 35 minutes or until a toothpick comes out clean.
