Corn and Broccoli Turkey Casserole safe

A tasty way to enjoy some of those turkey leftovers.

This is a quick and easy way to use those turkey leftovers from Thanksgiving or make this with chicken. Either way it's a hearty, comfort kind of casserole.

Prep time 20 minutes
Cooking time 25 minutes
Servings 6

Ingredients

1 small onion, finely chopped
1/4 cup butter
1/4 cup rice flour
1/2 teaspoon minced garlic
3/4 teaspoon salt
1/2 teaspoon ground mustard
1/2 teaspoon freshly ground pepper
1 1/2 cups milk
2 cups frozen corn
1 12 ounce package frozen broccoli, thawed and chopped
2 cups cubed, cooked turkey or chicken
1 1/2 cups shredded cheddar cheese
2 eggs, slightly beaten

Instructions

In a large saucepan, saute onion in butter until tender. Add garlic, cook for a minute. Combine flour, salt, mustard, and pepper; stir into onion mixture. Gradually add milk. Bring to a boil over medium heat. Cook until thickened, this happens fast, so keep watching and stirring it. Remove from heat.

In a large bowl, combine the corn, broccoli, turkey/chicken and cheese. Whisk eggs into the onion mixture. Pour over turkey mixture; stir to combine. Transfer to a greased 1 1/2 quart baking dish. Bake uncovered in a 350 degree oven for 25030 minutes.

    Valerie...fixed this for our small church family group last week and everyone liked it alot. I did use chicken and instead of salt/pepper I used seasoned pepper to cut down on salt intake for us...and used frozen peas instead of broccoli - super good! Thanks...Diana Corey
