Corn Dog Bites safe

Perfect for a kids lunch, a party or just because!

Super easy to make and makes a ton! Adjust to fit your needs, either leave the hot dogs whole or cut them up as I have done for a party snack. I made these for my family during the Super Bowl and they loved them!

Ingredients

1 egg, beaten
1 cup cornbread muffin/bread mix (I used Bob’s Red Mill)
1 cup milk (more may be needed)
8 gluten free hot dogs (could do as many as 12 depending on size)
Oil for frying

Instructions

Combine everything but the hot dogs. The batter should be about the consistency of pancake batter.

I used 1/4 pound gluten-free hot dogs and cut them into 5 pieces, but you could use any hot dogs. This makes a large amount of batter.

Heat the oil in a large pot or deep fryer, be careful not to use more than a couple of inches in the bottom of the pot, or follow manufacture instructions for your deep fryer. Oil should be at about 370 degrees.

Drop corn dogs into hot oil a few at a time, being careful not to overfill your fryer/pot. Fry until golden brown, should only take a couple of minutes. You might need to turn the corn dogs over halfway through cooking to ensure that both sides get browned.

Remove from hot oil and allow to drain on a wire rack or paper towel. Serve with whatever you wish for dipping, or just enjoy them plain.
