Country Baked Beans safe

A bit of good old fashioned country cooking for your next barbecue!

Amazing flavor and SO worth the extra effort and time. Could be made in a slow cooker, but better results come from slow oven cooking!

Ingredients

6 cups water
3 cups dried navy beans
1 large sweet onion, sliced
1/3 pound chopped bacon, raw
1/2 cup packed brown sugar
1 cup molasses
1 1/2 teaspoons salt
2 teaspoons dry mustard
freshly cracked pepper, to taste

Instructions

Heat the water and beans to boiling in a large pot. Boil 2 minutes; remove from heat. Cover and let stand for 1 hour. You can avoid this step if you soak your beans over night. Drain your beans and put back into the pot with enough water to cover them. Heat to boiling; reduce heat. Cover and simmer until tender, about 1 to 1 1/2 hours. Be careful not to boil your beans or they will burst.

Drain beans, reserving liquid (cooking them in a pasta pot with a removable strainer is helpful). Layer beans, onion and bacon in an ungreased casserole or Dutch oven. Mix the brown sugar, molasses, salt, mustard, pepper and bean liquid; pour over the beans. Add enough water to almost cover the beans. Cover; bake in 350 degree oven, stirring occasionally, 3 hours. Uncover and bake until the beans are of the desired consistency, about 30 minutes longer.
