Cranberry Glazed Meatballs
The best meatballs ever! A family favorite for any holiday!

I have been making these for years, they are so easy and were very easy to adapt to a gluten-free lifestyle. So easy to make and always a crowd favorite!

Ingredients
2 pounds lean ground beef
1 cup gluten free corn flake cereal
1/2 cup dried parsley
2 eggs, slightly beaten
2 tablespoon gluten free soy sauce
1/4 teaspoon pepper
1 teaspoon onion, minced
1/3 cup ketchup
1 (16 ounce) can jellied cranberry sauce
12 ounce bottle of gluten free chili sauce
2 tablespoons brown sugar
1 teaspoon lemon juice
Instructions
Mix beef, corn flakes, parsley, eggs, soy sauce, pepper, onion and ketchup with a fork. Gently form into one-inch balls. Place in large glass baking pan sprayed with non stick spray. Refrigerate while making sauce. Heat cranberry sauce, chili sauce, brown sugar, and lemon juice in a pan. Mix well as you heat the sauce. Pour hot sauce over meatballs. Bake at 350 degrees for one hour. Serve as a meal over rice or as an appetizer.

Valerie I am making these tonight. So you put this in like a baking dish rather then a cookie type sheet? I was thinking of more like a cake size pan. Will that work?

I usually use a glass baking dish, like a 9x13 size or bigger if you are doubling it.
