Cranberry Nut Bread safe

This is great to make at Christmas time.

This is tasty bread. The flavors of this bread are truly better the day after baking it.

Prep time 30 minutes
Cooking time 45 minutes
Servings 1 loaf

Ingredients

2 cups gluten-free flour (see notes*)
3/4 cup granulated sugar
1/2 tsp salt
1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp xanthan gum
1 tbsp orange zest (when you mix it in the flour make sure it looks evenly distributed and add more if you need it)
3/4 cup orange juice, freshly squeezed (store-bought will not achieve the right flavor)
1/4 cup butter or butter substitute, melted
2 eggs
1 cup whole cranberries
1 cup walnuts, chopped
a little raw sugar (for the top)

*Note 1 – The recipe author makes her own gluten-free flour by combining 1 part sorghum flour, 1 part tapioca flour, and 1 part brown rice flour.

*Note 2 – You can also make your own gluten-free flour by blending 4 cups rice flour, 4 cups bean flour, 4 cups potato starch, 2 cups tapioca flour, and 7 tsp guar gum.

Instructions

1 – Preheat the oven to 350 degrees.

2 – In a medium bowl, sift all the dry ingredients together.

3 – Mix all the liquid ingredients together in a separate bowl.

4 – Add the liquid ingredients to the dry ingredients and mix until just moistened.

5 – Add the whole cranberries and 3/4 cup of chopped walnuts.

6 – Spoon the batter into a greased loaf pan (top with raw sugar and 1/4 cup walnuts, if desired) and bake for about 45 minutes. Once the bread is done, let it cool for 10 minutes in the pan before releasing to your cooling rack.
