Cream Cheese Mints
Creamy and sweet, perfect for the holidays!

Easy to mix up for your holiday gatherings. Plan a bit ahead to allow for drying time. Your guests will love the added touch of homemade mints on your holiday table or in your gift baskets. Makes about 100 mints, perfect for gift giving.

Ingredients
4 ounces cream cheese, room temperature
1 pound package powdered sugar
1/4 teaspoon peppermint extract
red food coloring to desired color (optional)
1/2 cup granulated sugar for rolling
Instructions
Mix all ingredients in a bowl, best if you use the dough hook of your mixer. Add enough food coloring to achieve the desired color for your mints. Once it is combined, kneed with your hands until the dough is easily worked. Add a bit more powdered sugar if the dough is too sticky. Once your dough is the a desired workable consistency, divide the dough into small sections to shape into a long rope. Roll and shape the rope into a 1/2 inch wide rope, then cut the rope into 1/2 inch sections. Roll those pieces into a ball and then roll in sugar. Flatten with your fingers or the bottom of a glass. a candy or cookie press will also work well. Small candy molds will also work well.
Once you have your mints shaped, spread out onto a piece of waxed or parchment paper to dry. Allow to dry at room temperature for 12 hours. Flip the mints and allow to dry on that side for an additional 12 hours.
