Dark, Moist and Delicious Chocolate Cupcakes

I made these cupcakes for my sons friend who has allergies to gluten. When he tried one he was pleasantly surprised at the texture. He said they tasted like they were just regular cupcakes. He couldn't tell that they were gluten free at all. I was so happy that I had made something for him that didn't make him feel left out.

Ingredients
2 cups sugar
1 3/4 cups gluten free flour blend (I used nuts.com blend)
3/4 cup unsweetened cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
2 eggs
1 cup milk
1/2 cup canola oil
2 tsp vanilla
1 cup boiling water
Instructions
Heat oven to 350
In a large bowl stir together the sugar,flour,cocoa,baking powder,baking soda and salt.
Add eggs,milk,oil and vanilla. Beat on medium speed for one minute. Then stir in the hot water slowly. The batter will be thin.
Pour into lined muffin pan, or silicone muffin pan about 2/3 full. Bake for about 20 to 22 minutes.
Cool and frost

Does this recipe require any xantham gum? Also, is it a 1/2 cup of oil?

Michelle I just left you a message. I did not use any xantham gum. Yes 1/2 cup oil. I will correct that. They are really good cupcakes. Enjoy!

Michelle the boiling water is key to the texture of this recipe. I am so curious to know how you liked them? And what flour you used?
