Delicious Gingerbread Cupcakes
These are so moist and have a nice dark color to them

I made this recipe from using the TanyaG's Gluten-Free flour mix that is on this site. The texture is very much like a cupcake that you used to have. There is a wonderful flavor to these as well. When you bite into them it will remind you right away of the fall and the holidays.

Ingredients
1 1/2 cups of TanyaG’s gluten free flour mix
1 teaspoon of baking powder
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/4 teaspoon ground cloves
1/8 ground allspice
1/2 ground ginger
1/2 teaspoon of salt
1/2 cup butter
1/4 cup water
1/2 cup packed dark brown sugar
1/2 cup molasses
3 large eggs
Instructions
Preheat oven to 350
In a small bowl melt the butter and water in the microwave.
Sift together all dry ingredients. Set aside.
Beat together the molasses and brown sugar until smooth. Add eggs one at a time. Beating for 30 seconds after each egg.
Beat in the flour mixture slowly just until incorporated. Add the butter mixture beat until smooth. Batter will be runny.
Fill your sprayed/lined muffin pan 3/4 inch full. Bake for about 20 minutes.
These are really good with your favorite cream cheese frosting on top.

Yummy...I want to bake these just so my house smells yummy! :-) I'm sure they taste wonderful too. Perfect for a fall morning with a steamy cup of coffee. May have to try that this weekend. :-)

May I suggest putting TanyaG's flour recipe, by itself, on this site? I've only found it attached to other recipes.

also, were you aware that this version does NOT give me a printer friendly version of the recipe? Just letting you know.. (I notice the 'beta' in the heading of the software)
