Dutch Apple Cake safe

Tasty and full of fall flavor!

Absolutely delicious.

Ingredients

3 medium tart apples, peeled, cored and diced
3 tablespoons plus 1 cup sugar, divided
1 teaspoon ground cinnamon
2/3 cup vegetable oil
4 eggs
1 teaspoon vanilla
2 cups gluten free flour blend
1 teaspoon xanthan gum
1/4 teaspoon salt

Instructions

In a large bowl, combine the apples, 3 tablespoons sugar and cinnamon; let stand for 1 hour.

In another bowl, combine the oil and sugar. Add the eggs, one at a time, beating well after each addition. Add the vanilla. Combine the dry ingredients in another bowl; gradually add to the sugar mixture and beat until smooth. Fold in half of the apple mixture.

Pour into a greased 9×5-inch loaf pan. Pour remaining apples over the top of the cake and push the apples into the top slightly.

Bake at 300 degrees for 1 1/2 to 1 3/4 hours or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to wire rack.
