Perfect topping to any stew or soup.
We love chicken and dumplings here and I often will top any stew with dumplings for a change of pace. These dumplings are so good, light and fluffy. Perfect for on top of a hot pot of turkey soup, as well!
|Cooking time||15-20 minutes|
1/2 cup white rice flour
1/3 cup potato starch
2 teaspoons baking powder
1/4 cup butter or nondairy substitute
1/2 teaspoon salt
1/2 teaspoon sugar
1 egg or 1/3 cup liquid egg substitute
1/3 cup milk or nondairy substitute
1/2 teaspoon dried basil
1 teaspoon dried parsley
1/2 teaspoon granulated onion powder
Whisk together the dry ingredients, cut in butter as you would for biscuits. Beat the egg and milk together and mix into the dry ingredients. Fold in the herbs and onion powder. Drop by tablespoon into simmering broth or stew. The dumplings can be close together. Cover tightly and reduce heat to simmer. Cook about 15 minutes or until tender and floating.
