French Lentil Salad
Serve this easy, delicious salad warm or cold

As we head into fall, we all start craving soups, stews, casseroles–warm dishes. But I wanted to post this recipe I made a few days ago, one more taste of summer salads in these waning days of autumn. However, since it is getting cooler, you can actually eat it as a warm salad and it turns out quite delicious. This recipe is extremely easy to make, high in fiber, protein and nutrients. It is French in the sense that it uses French Lentils, which are a smaller, darker lentil that maintain their shape well. It is also French in that the dressing uses the distinctive taste of Dijon mustard. You can eat this salad as a side, or turn it into a main dish salad by putting it over lettuce or other greens and perhaps adding some chicken breast.

Ingredients
3 cups cooked French Lentils
3/4 cup olives, sliced (or less if you don’t like a lot of olives like I do)
1 small red bell pepper, diced
3/4 cup fresh Italian parsley, chopped
Dressing
1 tbl Dijon mustard
1/2 tbl dried thyme, or 1 tbl fresh thyme
1 tsp dried oregano
2 tbl olive oil
1 tbl red wine vinegar
dash of Umeboshi Vinegar to taste (You can find Umeboshi Vinegar, a traditional Japanese food, in health food stores. It is salty, so make sure to taste before adding more)
Instructions
1. Cook the lentils, cool, and drain them. In a large bowl, add lentils, olives, red pepper and parsley.
2. To make the dressing, blend all ingredients in a blender or food processor. Adjust seasonings to taste.
3. Dress lentils with Dijon dressing and serve! It also makes great leftovers as the dressing has had more time to soak in.
