Fruit Filled Baked Oatmeal safe

Even those that don't normally like oatmeal will enjoy this!

A new twist on an old breakfast favorite. A bit of planning ahead and you'll have an amazing bowl of oatmeal. Even my oatmeal hating daughter loves this. Major score there! :)

Cooking time 20-25 minutes
Servings 8


2 1/2 cups gluten free oats
1 3/4 cup buttermilk
1/2 cup coconut oil, any oil or even butter will work
4 eggs
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp salt
2 tsp apple pie spice
2 tsp vanilla
1 cup dried cranberries or raisins
2 cups chopped apple


In a large bowl, combine the oats and buttermilk. Cover and let sit on the counter overnight to soak. Here is where the planning comes into play.

In the morning, beat the oil, sugar and eggs until glossy. Add baking powder, salt, apple pie spice and vanilla and beat together. Stir in the oats and fruit. Pour into a greased 9×13 inch baking pan and bake in a preheated 350 degree oven for 20-25 minutes.

Spoon into bowls and enjoy. You can add milk, chopped nuts or whatever you would normally have on your oatmeal. It is plenty sweet, so no extra sugar will be required. Enjoy!

    To help anyone who is oat sensitive, I just wanted to add that buckwheat would be a great substitute for the oats in this recipe.
