Garden Fresh Macaroni Salad safe

A salad that is a bit on the sweet side thanks to the sweet flavor that the fresh peas, pepper and corn bring to the party. Quite tasty!

Ingredients

1 pound gluten free pasta of your choice
1 cup fresh peas, frozen can be used thawed
1 cup fresh sweet corn, frozen can be used thawed
1 cup chopped sweet red pepper
1 cup mayonnaise
2 Tbsp sugar
2 Tbsp apple cider vinegar
freshly ground pepper to taste
pinch of salt

Instructions

Cook pasta according to package instructions. Once the pasta is cooked, drain and rinse with cool water to cool pasta down before adding remaining ingredients. Place in a bowl, add peas, corn and pepper. Stir to combine.

In a small bowl, mix remaining ingredients. Pour over pasta mixture and toss to coat. Refrigerate until ready to serve.
