GF fried Zucchini Sticks certified

1 c. Pamela’s Baking Mix (or any other gluten free flour blend you like)
1 tsp. baking powder (ONLY if NOT using Pamela’s)
1/2 tsp. Real Salt
1 egg, lightly beaten
1 c. milk
2 tbsp. coconut oil (or another good quality oil)
1 lb. zucchini, cut into 3 or 4 inch sticks
Good quality oil for deep frying


*Mix ingredients. Wet zucchini sticks then pat down with a paper towel. Dip sticks in batter one at a time and fry in hot oil for 1-2 minutes. Flip and cook 1-2 more minutes. Watch carefully, it doesn’t take long at all. Enjoy hot, with gluten-free ranch dressing…MMM!!!
